Abstract
The influences of ultrasonic irradiation on gelatin were investigated by measuring the amount of sol fraction and molecular weight distribution of sol fraction from gelatin film hardened with formaldehyde. The ultrasonic irradiation of gelatin solution increased lower molecular weight component, while the amount of sol fraction increased even after hardening. The effects of ultrasonic irradiation on amino acid composition was hardly observed.
