The effect of oxidation of gelatin on methionine and aldehyde contents using H2O2, NaClO, NaClO2 and CH3COOOH was studied. Also change in physical retardance by methionine and aldehyde contents by oxidation was investigated. The oxidation affected the methionine and aldehyde contents depending on oxidation conditions (oxidant species, concentration, and pH). The aldehyde contents decreased with weak oxidation and increased with strong oxidation. Increase in aldehyde content was partly caused by formation of reducing sugars. The physical retardance increased with decrease in the methionine content by oxidation. It is considered that change in physical retardance of the oxidized gelatins is originated by change in the pAg value of the emulsion during ripening.
