In order to calculate the molecular weight average of Gelatin, current HPLC method for measuring the molecular weight distribution was re-examined. To this end, desirable Test methods contains a new Separation HPLC column and elution conditions. According to this new test method, the void area disappeared and confirmed a molecular size separation by Sec-MALS. The Molecular weight average (Mw) of several gelatins were measured according current and new test methods and compared.
