Foaming ability and foam stability of nonaqueous fluid with dextrin fatty acid esters having different carbon chains were investigated by using handmade foaming apparatus with a nitrogen gas aerator. As a result, dextrin palmitate was found to be the best additive for both the foaming ability and the foam stability. Furthermore, the addition of water improved the foam stability and extended the foam-vanishing time, for which an optimum content of water was found to exist. These results suggested the formation nonaqueous foam layer containing water in the surface or inside the layer.
