Abstract
Distribution of starch granules and protein in young bamboo shoots was examined by
histochmeical methods. Starch granules were scattered around vascular cylinders in the body
and joint of roots. The body and point head had numerous starch granules. Proteins existed in
vascular cylinders and nuclei, but little in cytoplasm. In boiling young bamboo shoots, proteins
coagulated by heat could not keep starch granules owing to little coagulated proteins in the body
and point. Therefore, starch granules dissolved in hot water used for boiling young bamboo
shoots.
