To search for odorants that have orange juice alternative effects, sulfur-containing odorants in various citrus essential oils were analyzed and underwent a sensory evaluation, and consequently discovered useful odorants. First, two sulfur-containing odorants, 2-(5-isopropyl-2-methyltetrahydrothiophen-2-yl)ethanol and 2-(5-isopropyl-2-methyltetrahydrothiophen-2-yl)ethyl acetate, were identified in various citrus essential oils by the coupled GC-MS and Ag-SPE techniques, which used silver ions supported on silica-gel. To clarify the orange juice alternative effects of the two sulfur-containing odorants, Quantitative and Descriptive Analysis (QDA) and measurement of the Point of Subjective Equality (PSE) based on the orange beverage containing 20% orange juice were applied. Based on the results of the two types of sensory evaluations, these odorant mixtures were observed to have an orange juice alternative effect by enhancing the various flavor-notes, and its replacement capacity of the orange juice was equivalent to 3.8%. These results suggested that these citrus-derived sulfur-containing odorants can be useful as alternative components in orange juice.
