This study aimed to clarify the concentration at which skatole’s odor quality begins to change and its characteristics. Olfactory thresholds were measured using the triangle odor bag method, and the odor quality of samples identified as odorous was evaluated.
As a result, the average olfactory threshold was determined to be 7.3×10⁻7 ppm. At an odor concentration of 3, the odor quality of skatole was observed to shift from light and mild to heavy and cloying. An odor concentration of 3 was designated as the recommended level corresponding to a 20% unacceptability rate, as defined by the AIJES odor guidelines.
