Changes in traditional foods consumption and those regional development in the northern mountainous region in Miyazaki Prefecture

Abstract

The purpose of this presentation is to use Shiiba Village, Miyazaki Prefecture as an example, to (1)understand what kind of traditional cuisine there is, (2)have a eating habits of those traditional foods changed compared to the past, and (3)explain the eating habit of those traditional dishes. The aim is to clarify the characteristics seen in the regional development of the region.As the result of the research, the following was clarified. That is, Among the diverse traditional foods of Shiiba Village, we were able to narrow down the most important to 23 items. Rank the items by scoring them based on how much they are currently being eaten. Based on the score, the 23 items are grouped into the 1st group, which are widely eaten, and the 2nd group, which are not as popular as the 1st group, but which are still loved by the local community, and the 3rd group, we were able to classify them into those that are in danger of disappearing. There is almost no difference in the consumption of these foods depending on age, and the items in group 1 and 2 can be said to the soul foods that have long been rooted in the region. Analysis of the regional evolution of consumption of 23 items revealed six regional evolution.
