Abstract

In Taiwan, consumer consciousness about food safety and health is increasing. This study focuses on the fast food chain Company “A” regarding food procurement, food processing, and delivery. Company “A” was established by the Japanese Company “M” and Taiwanese Company “T” in 1990. The ideals of Company “A” are “taste,” “relief,” “security,” and “health.” Company “A” aims at high-level ingredients hygiene management in Taiwan. Food safe strategic characteristics of Company “A” include the following five points: directly-managed fast food shops; the establishment of the food inspection center; the establishment of Company S as the central kitchen; delivery system by the distribution center; and the contract farming system.
