Abstract
In this study, we aimed to predict the overall performance of a sensory test based on instrumental measurement data, using brown rice as a sample. Partial least squares regression analysis was conducted using eight highly contributing items as explanatory variables, and the overall score of the sensory test as the objective variable. Additionally, a prediction equation was derived to predict the sensory score of eating quality based on instrumental data. To confirm the validity of this prediction equation, we applied it to other samples. The predicted values closely matched the actual measured values.
These findings suggest that instrumental measurements can be used to predict sensory scores of eating quality without human intervention.
