Abstract
Inverse relationship between the electric conductivity (at 40C) and the contents of organic constituents (fat, protein and lactose) in normal milk, which was anticipated from the inverse relationship between the electrolyte concentration and the contents of the major organic constituents, was confirmed. On the basis of the relationship, the possibilities and limitations of an estimation of milk solids content from the conductivity measurement were examined. Contributions of milk constituents on the conductivity were also evaluated from the multiple regression equations. It can be estimated with a probability of 0.95 that the quarter milk samples whose con ductivity values are less than 65×10-4Ω would contain more than 7.13% of (L+P) or 9.77% of (F+P+L), and the samples with the values more than 80×10-4Ω would contain less than 7.10% of (P+L) or 9.79% of (F+P+L), and hence the two groups of samples would be separated with regard to the milk solids content under the conditions of the present study.
