In this paper, the models which enable the veriufication of the species by the color of the puffer meat is proposed. A total of 185 fish dressed by the cooks (Migaki) were examined to determine what aspects of the surface color of the fish the cooks use for veriufication. Fuzzy inference models were then constructed and evaluated using the colors as antecedent-part variables, and differentiation accuracy according to the models became over 90%.
