Sushi is now the most popular traditional Japanese dish in the world."Edomae sushi" is the origin of today's “Ngiri sushi”.High-class Edomae sushi service is unusual style. In addition, there is something called a “Sahou”. It is one status symbol to put in a high-quality sushi shop.

What are the factors that can acquire a stable customer base and maintain a high-class image?

How did the "Sahou" occur in the process of upgrading Edomae sushi? And is the "service" of high-class sushi allowed from the intimidating?
