On the defending process of the blackening of apple-juice

Abstract

1. 98 chemicals were tested on the preventing ability for the blackening ot apple-juice the most undesirable phenomena in apple-juice or wine making.
2. All chlorides, some sulphites or alums were proved to be effective.
