Dried sweet potato (1kg) hydrolysed with H2SO4 was carefully fermented with distillery yeast Rasse XII at 27°.
There was found no bacteria in the fermented liquid.
About 4 L of the fermented liquid was distilled and in the distillate diacetyl was detected as red colored crystals of Ni-dimetyl glyoxime.
