Abstract

Sado is a small island in Niigata prefecture having the area of about 857 square kilometers.
The waters of 13 breweries in this island were analysed, 5 of which were proved to be soft and suitable for brewing, while the others were somewhat hard and had about 80-100 mg of Cl.
Two examples showed an astonishing content of nitrite (3 mg in 1L), but no trace of nitrate was detected.
