Abstract

Several kinds of enzymes-pepsin, trypsin, erepsin, α-amylase, diastase, maltase, invertase, lipase, urease, pectinase, catalase, peroxidase and tyrosinase-were detected and their activities were compared by the ordinary method among 49 kinds of Aspergilli consisting of 42 strains of Asp. flavus-oryzae, 5 strains of Asp. tamari group, and each 1 strain. of Asp. candidus and Asp. ochraceus. The mixed protease activities of the above Aspergilli were compared by the action on different kinds of proteins such as soya glycinin, rice or yzenin, wheat glutenin, gelatin and milk casein, and then the Aspergilli were classified into three groups, i. e. a group of Aspergilli with high protease activities for all kinds of proteins, that with low protease activities, for all kinds of proteins and that with different activities for different proteins.
Finally the properties of tane-koji in the market were discussed from the viewpoint of the activities of protease and diastase.
