Abstract

The effect of sodium chloride, which in general had influence on Rf value in the paper chromatography, was excluded by utilization of the multiple chromatography.
In the Tamari of speedy brewing, xylose, arabinose, glucose and galactose were detected, whil in the Tamari of natural brewing, glucose was detected.
The organic acids were studied in the Tamari of speedy brewing. They were separated from other components by extraction with ether. The extracts were submitted to the detection of lactic, succinic, acetic and formic acids, and the components of extracts were examined by paper chromatography.
