Abstract

Preservative action of aluminum chloride on sake was investigated. When aluminum chloride as added to sake in the amount of 0. 025%, it was recognized to-prevent the “Hiochi”. Hiochi is putrefaction phenomenon of sake by “Hiochi” bacteria.
