Abstract

A new method is described for measuring the turbidity of saké. We measured the turbidity of saké with the Pulfrich nephelometer. At the same time we measured the turbidity of BaSO4 precipitation with the same apparatus under certain conditions and the relation between SO4 ion concentration and turbidity is expressed as a curve. The turbidity of saké is expaessd as SO4 ion concentration in turbid BaSO4 solution. Turbidity of saké=SO4mg/cc.×10-4
