Abstract

In order to know the differences among practical characters of the baker's yeast 53 strains collected from 12 countries were cultured incrementally in jar fermentor. About 150 g of yeast was gained.
Comparison of practical characters of these compressed yeasts will be reported in following paper.
This paper describes comparisons of growth rate and bud ratio of each strain.
(1) No significant differences were observed in the bud ratio of yeast cells during growth phase, but the bud ratio of Japanese strains seemed to be lower than that of foreign strains.
