A method for determining volatile carbonyl compounds in saké by thin-layer chromatography was studied.
Carbonyl compounds converted into 2. 4-dinitrophenylhydrazone derivatives were separated into individual components by silica-gel thin-layer chromatography, and collected in small glass filters with suction.
The elvate chloroform fractions were filled up to appropriate volumes, and ultra violet absorption of the solutions was measured in a spectrophotometer at individual maximum absorption wavelengths. Contents of individual components were calculated from calibration curves.
Separation of acetaldehyde and furfural, and of iso-valeric aldehyde and n-caproic aldehyde was not so good as compared with other components.
Recoveries of respective carbonyl compounds were very good when small-size glass filters were used.
