Effects of ethanol on the growth of 72 strains of hiochi-bacteria were examined.
The growth of gonuine hiochi-bacteia were stimulated by ethanol. Optimum concentration of ethanol for the growth was between 5 and 8%. On the other hand, ethanol exhibited only toxic effect for hiochi-natured lactobacilli. From these results, it was supposed that hiochi-bacteria could be classified into gonuine hiochi-bacteria and hiochi-natured lactobacilli by examining the effect of ethanol on the growth.
The growth stimulating effect for genuine hiochi-bacteria was also observed in other alcohols and alcohol derivatives.
