Abstract

Deferri-ferrichrysin (DFCY) participates in color development of sake caused by exposure to sunlight. This reaction was named deferri-ferrichrome reaction (Reaction I).Since DFCY alone did not cause color development, other components which participated in the Reaction I were studied.From the results of fractionation of sake with ion-exchange resins, the scheme of the Reaction I was presumed as follows
