The Effects of Ethanol concentration and Temperature on the Specific Growth Rate

Abstract

Dependence of the specific growth rate of a shôchû yeast on both the growth temperature and the ethanol concentration in a culture medium was analyzed by the two-way layout method.
Contribution ratio of the ethanol concentration to the specific growth rate μ was 74.9% and that of the growth temperature was 17.7%. Contribution ratio of the interaction between ethanol concentration and temperature was 7.3%.
The higher the ethanol concentration and temperature, the lower the specific growth rate. Contribution ratio of the interaction became higher when the ethanol concentration was higher than 4% and the temperature was above 30°C. Conversely, when the temperature was low, the specific growth rate was kept fairly unchanged though the ethanol concentration was high.
