Analytical Data of Whiskies

Abstract

After World War II, various brands of scotch, bourbon, and irish whiskies were imported in Japan and we had much difficulty in selecting them which were suitable for Japanese people. Recently some one says that light whiskies such as Cutty Sark or Teacher's are popular for Japanese.
Th6 analytical data of those whiskies are shown in this paper.
The most remarkable difference among the whiskies as concerning to the components of them was the amount of fusel oil which determined by reddish violet color developed reacting with vanillinsulfuric acid reagent according to the method of Takahashi and Sata or Komorowski's original prescription.
It was observed faint coloration in the so-called light whiskies.
A/B ratio (the amount of amyl alcohol/that of isobutyl alcohol) was generally near 1 in scotch whiskies while 3-4 in bourbon or some of Japanese whiskies.
