Abstract

Contamination with wild type yeasts in sake mashes was further investigated mainly in the sake factories in which remarkable contaminations were found in the test reported previously.
Among 250 samples (seed mash 73, sake mash 177) tested, 2 of seed mash and 6 of sake mash were found to be contaminated at more than 10%, tested by the TTC-overlay method; the contamination rates were lesser than the preceding year. Moreover, average purities were improved.
No contamination with killer strains was found.
