Abstract

Saccharomyces cerevisiae strains isolated from rice koji of awamori, rice koji of awamori by enrichment culture method and awamori mashes were discussed for growth in vitamin-free synthetic medium of Tsukahara et al.
These yeasts were growth negative. Whereas NI 7214 (awamori yeast) was growth possitive. However, the isolated yeasts became to growth possitive with addition of vitamin B1 into vitamin-free synthetic medium.
Both isolated yeasts and NI 7214 were growth negative in vitamin-free synthetic medium of omission of citric acid and K3. citrate. Saccharomyces sake was growth possitive in any vitamin-free synthetic media.
Other industrial yeasts (exception of shyochu yeasts) were growth negative in any vitamin-free synthetic meda.
