Abstract

Microflora of packaging materials used for sake filling and their sterilization methods were investigated.
1. Hiochi-bacteria were not detected on the packaging materials used for sake filling.
2. I.ow concentration of sodium hypochlorite solution was enough to sterilize the bottles.
3. It was found that UV-ray irradiation served to sterilize the packaging materials except the bottles under some suitable conditions.
4. For killing of strain S-14 (genuine hiochi-bacterium) at 99.9% killing rate by UV irradiation on the surface of SI medium, UV-dose of 83μw·min/cm2 was required.
