Abstract

The aroma components were adsorbed with carbon textile (ACT) as following order,
EtOCapr>i-AmOH, i-AmOAc>i-BuOH, i-BuOAc≥EtOAc>EtOH
We collected drains containing less EtOAc using ATC. Aroma components evaporated abunduntly in the early period of fermentation.
