Changes of Metal Contents of Rice Treated with Running Water

Abstract

The changes of mineral content of rice after treatment with running waters consist of each tap, distilled, ion exchange resin treated and salts added or by its combinations were investigated.
Contents of sodium (Na), potassium (K), calcium (Ca), and magnesium (Mg) were much more absorbed onto rice with increasing alkaline side but iron compound (Fe) and zinc (Zn) were absorbed at pH 6-7 adjusted water.
K and manganese (Mn) contents in rice were influenced by hardness of water. Ca was absorbed whenever water contained Ca-salts.
Minerals were absorbed onto both starch and proteins of rice and eluted by ion exchange reaction with other minerals in water or by enzymic digestion.
