Abstract

Mineral removing method from sake made of puffed low polished rice was studied.
Uniselex UR-3200 (H) resin and Amberlite IR-120 (H) resin were selected as a well adsorbent for Fe ion and other minerals in sake respectively.
Diaion WA-21 (OH) resin was well suited for adsorption of acids which increased in sake after treatment with H type of Amberlite IR-120 resin.
Mineral removing system from sake established in this work was as follows ; Resin 1 (Amberlite IR-120 (H))--Resin 2 (Diaion WA-21 (OH))--Resin 3 (Uniselex UR-3200 (H)), sake was treated successively, with resin 1, and resin 2 as the one batch system, and resin 3 as the circulating system.
The volume ratio of sake to resin 1, 2, and 3 at treatment was 30, 22, and 100 times respectively.
After treatment with this system, mineral contents in sake containing 1. 8 ppm of Fe, 946 ppm of K, and 360 ppm of Mg, decreased to 0 ppm, 164 ppm, and 0 ppm respectively, and optical density at 430 nm decreased from O. 258 to O. 013, and acidity also decreased from 3. 6 to 1.0.
