Abstract

The conditions of ethanol fermentation of beet molasses were investigated usingSaccharomycescrervisiae 180 and 909-1.
Nitrite ion containd in beet molasses, one of inhibitors for fermentation decreased by autoclave treatment and thus ethanol production was promoted.
Optimum pH and total sugar content (TS) for yeast growth in beet molasses were pH 5. 0 and TS 10% respectively in the presence of exogenous phosphate, whereas pH 5.0 and temperature 30°C were optimum for ethanol production.
Agitation of mash and stepwise addition of beet molasses accelerated the ethanol production and fermentation yield effectively.
