The release of inorganic phosphate from rice by enzymes in sake-koji was studied. It was found that their contribution in the liberation of inorganic phosphate from rice was 98.7%. Enzymatic properties of acid phosphatase and phytase in sake-ko ji were examined, and conditions of enzyme assay were established. The determination of acid phosphatase and phytase activities in sake-koji and commercial enzymes for brewing revealed that both enzyme activities were detected in the former but activities in the latter were low. It was shown in the evaluation of commercial enzymes responsible for the release of inorganic phosphate from rice that the amount of inorganic phosphate liberated by acid phosphatase was almost the same as that liberated by sake-koji enzymes and considerably larger than that liberated by phytase.
