Abstract
Two solid modifications of elaidic acid |trans 18:1(9)aci|,high and low-melting(HM and LM) phases, have been confirmed. The HM phase occurs through a heterogeneous nucleation on the(OO1)crystal face of the LM phase. A perpendicular arrangement of acyl chains was found in the LM phase, which is the first case in fatty acids.
