Abstract
This study aims to develop a quality evaluation system for fish by modeling the knowledge of a fish market auctioneer. At first, the current system for Japanese tilefish in order to determine what aspects of the surface color and freshness of the fish the auctioneer uses for evaluation was assessed. As the result, it was clarified that the auctioneer focuses on the colors at five points on the surface of the fish. In addition, it was established that this evaluation approximately corresponds to the freshness of the fish. Furthermore, the statistical model created based on this method was found to be a highly accurate system for determining the quality of fish. These results demonstrate the validity of the proposed method, which utilizes the knowledge of the auctioneer in order to design a quality evaluation system.
