Abstract

Aurantionone, 2- (1', 1'-dimethylacetonyl) -2, 4, 6, 7-tetrahydroxy-5-methoxy-9-methyl-1H-phenalene-1, 3 (2H) -dione, was isolated from a culture broth of Penicillium aurantio-virens, and it has been found to be an excellent antioxidant and synergist for tocopherol (Toc).
Under autoxidation conditions, aurantionone remarkably synergized with Toc in lard and stabilized vegetable oils such as soybean, rapeseed, and palm oils. Following the addition of aurantionone (0.05 %), lard retained higher stability even after thermal treatment at 180°C for 25 h. During the oxidation of lard with Toc (0.04 %) under thermal oxidation conditions, the addition of aurantionone markedly retarded the oxidative decomposition of Toc.
Aurantionone is not mutagenic to Salmonella typhimurium TA 98 and TA 100 with or without rat liver S 9 mix.
