Abstract
A method for image-analysis was developed to assess water-phase separation due to creaming in 0/W emulsion. The coefficient of variation of the water-phase separation determined by visual observation of the boundary exceeded the value estimated with an image analyzer, particularly at the start of separation. The value for water-phase separation determined by visual observation of the boundary was larger than that calculated by Stokes' equation throughout the period of this study, 24 h. The value obtained with an image analyzer was less than that calculated 12 h after preparation. The image-analysis method may thus be concluded quite useful for determinating the extent of water-phase separation of O/W emulsion.
