Abstract
Starch-gel electrophoresis was performed to study the changes in the electrophoretic pattern of albumen of the quail (Cotrunix cotrunix japonica) eggs during the storage for 12 months. A significant change was observed in conalbumin zone of quail eggs stored in an unairconditioned room and in a refrigerator for 1 month or more. Oiling of quail shell eggs with liquid i-paraffin resulted in much retardation of occurence of the change in the electrophoretic patterns. Five electrophoretic protein zones were still observed clearly in the oiled eggs which were stored in a refrigerator for 12 months.
