Abstract
In this study, a novel method to measure the degree of glassiness of rye using an image scanner was developed. It was found that to setting the threshold value of the brightness between 66.7% and 70.6% was optimal for distinguishing the powdery area from the glassy area of rye on a blue color composite image, as judged from the absorbance of the glassy and powdery areas. It was also found that the proposed method, which does not classify the obtained images, is more effective than the currently used standard method.
