Abstract

A factorial experiment on the pre-treatments by using the two legumes and the two press machines was carried out. It was shown that the advantages of the piling pre-treatment from some points such as a rate of press, a consumed electric energy and an amount of total nitrogen in juice fraction. Although it was possible to obtain more total nitrogen in the processed juice by piling compared with the other methods from a material balance, this was caused by the high value of rate of press and by the increment of non-protein nitrogen during piling. EAA (Essential amino acid) index of the processed juice by piling seemed to be equivalent to the EAA of soybean, the piling for an useful method was proposed in order to obtain the leaf protein effectively.
