Abstract
The practical purpose of the present work is to obtain the most optimum heat transfer coefficient in pressure cooling system. In order to carry out the work, it was shown, in this paper, how to determine average heat transfer coefficient during precooling of packed fruits and vegetables by trial and error technique using finite element method.
Primarily, the finite element solution of heat transfer in model sphere was compared with analytical solution, and it was confirmed that the exact average heat transfer coefficient can be obtained by this methods. Secondarily, average heat transfer coefficient for packed beds of “Sudachi” was found to be h=24.4W/(m2·K) in the case of cubic stacking arrangement at superficial velocity of 1.62m/s. This method conformed to semi-practical precooler, and the average heat transfer coefficient for packed beds of Unshu Mandarin was h=23.3W/(m2·K) in the case of the random stacking arrangement at superficial velocity of 0.6m/s.
