The characteristics of sorption of grain kernels while soaking in the water, held at the constant temperature of 0, 10, 20, 30 and 40°C respectively, were investigated to determine the absorbing rate constant in moisture transfer equation and the equilibrium moisture content. The equation was derived from the assumption that adsorption would be in opposite direction to the drying process. The absorbing rate content and the equilibrium moisture content were calculated using the experimental results for the second falling rate period based on the theory of diffusion in a plane sheet, and the calculated results agreed with experimental results. It was recognized that there was a temperature dependency of Arrhenius type in the absorbing rate constant k.
