Abstract

In attempt to use the respiration property of grains an as index of the quality control during drying and storage process, the temperature and moisture content dependency of rough rice respiration was investigated. The relationship between temperature and respiration rate closely fitted the Arrhenius' equation and Gore's equation. In the relationship between moisture content and respiration rate, remarkable increase of respiration rate was observed in a region of moisture content above 23-25%d. b. and Arrhenius curve could be adapted for this relation. The respiration rate of rough rice was finally expressed by the Arrhenius' equation and Gore's equation respectively as a function of temperature and moisture content.
