Drying of Shiitake Mushroom Using Ionic Wind Generated by Crona Discharge

Abstract

The effect of ionic wind generated by corona discharge on drying of shiitake mushrooms were investigated with a drying system using a conventional hot air drying method by corona discharge. The experiments were made under different conditions of applied voltages and hot air flow rates at a constant temperature and humidity. The drying rate in the ionic wind treatment (ionic wind with hot air wind) was 1.1 to 1.6 times greater than that in the control (hot air wind only), and consequently a reduction in drying time was attained. The shrinkage of the dried shiitake pilei was reduced in the ionic wind treatment, which showed a possibility of the ionic wind for improving quality. Slight browning of the dried shiitake gills was observed in the ionic wind treatment. The effect of the ionic wind on drying of shiitake mushrooms was increased with increasing the applied voltage, and decreased with increasing the hot air flow rate. The ionic wind velocity was found to be expressed as a linear function of applied voltage.
