Abstract
Recently, researches for clarifying food flow have been progressed actively to assess the environmental load by food consumption and to predict the effect by the life style changes. In this situation, however, there is some limitation in the division of food materials by food consumption behavior that there is no way except for the division by expenditures because of the difficulty to calculate mass-basis by the change of property(processed food, change after cooking) and the mixture of many food materials(cooked food). This division based on the only expenditure can cause a large gap from the real flow.
This study is aimed to consider the way for conversion to weight-basis from expenditure-basis in dividing food materials flow by consumption behavior and indicate the possibility by applying this method to the Grains flow by consumption behavior (Home meal and Cooked meal).
As a result, when dividing by weight of raw grains, the consumption of grains as a cooked food occupied smaller portion than those when dividing by expenditure. This results from the fact that the price of processed foods or cooked foods includes not only the price for buying raw food materials but also the price for manufacture and distribution.
