The yielding behavior of a α gel O/W emulsion has been examined. The microbeads whose diameter is larger than the thickness of the shear layer formed at the first yield are dispersed in the sample. the stress ramp test is performed to evaluate the yield behavior. The influence of the dispersed particle diameter, the mass concentration of the dispersed particles, channel gap, and the material of the flow cell on the yield stress was evaluated by experimentally.
