The warmed-air drying process of laver was observed experimentally and transient behaviors of moisture content, temperature and survival ratio were examined. The drying process consists of two characteristic periods. i. e. a constant rate period and a falling rate period. This study focuses on heat and mass transfer during a falling rate period because of important effect on temperature and cellular survival ratio. The experimental observation indicates that there is different drying features between thinner and thicker layers of laver.
