Abstract
To clarify the mechanism of the greening reaction of “Gobo”, the authors used a concentrated, dialyzed solution of egg-white as a coupling reagent for the development of specific color for paper chromatography of several fractions extracted from “Gobo” with a few solvents, and detected a blue spot of RF value 0.64 on the water-, ethanol-soluble and ethyl acetate-insoluble fraction. This spot contains a compound, of which U.V. absorption curve is very similar to that of chlorogenic acid, and both of the curves have a maximum absorption at 323mμ, a minimum absorption at 262mμ, and the RF value 0.64 of this compound is equal to that of chlorogenic acid.
