Abstract
On the eight kinds of shellfishes, total sterol contents composed from several sterols were detemined by the gas-lipuid chromatographic (GLC), the thin-layer chromatography (TLC) -densitometric and the colorimetric methods. The respective determination values obtained by the three methods proved to be very approximate.
Twelve component sterols were detected from shellfish by the analysis of GLC with capillary column. Of which ten components were identified as Δ5, 22-C26-sterol, 22-dehydrocholesterol, cholesterol, brassicasterol, campesterol, 24-methylenecholesterol, stigmnasterol, β-sitosterol, fucosterol and isofucosterol, by the analyses of co-chromatography with standard specimens and gas chromatography-mass spectrometry.
The GLC method with capillary column was confirmed to be the superior procedure for the determination of net cholesterol concentration in shellfish since the exact sterol composition could be got by this method.
